Peyroli (40 km north of Béziers): 400 to 500 meters altitude, days are warm and nights
cool. This huge temperature contrast between night and day and the clay limestone
soil allow perfect ripeness and an elegant minerality in the grapes.
Pale straw colour.
White fruit and white blossom aromas on the nose, with a hint of spice.
Delicate fruitiness ont the palate, that combines with refreshing crispiness. A long, savoury finish.
Whole bunches are pressed in pneumatic press then the must settles for 24 hours at
12 to 15°c under protective conditions.
3 weeks of fermentation at 15°C in stainless steel tank and 20% ferments in French oak
The 2013 vintage started with a biting cold winter and a mild spring that both made the vegetative cycle slower than usual, and reduced the yields naturally. The moderate weather during the following summer and the bright end of autumn allowed grapes to ripen fully under excellent healthy conditions. Finally, harvest took place under beautiful weather, 3 weeks later than usual. In these conditions, white grapes have nice and fresh acidity and red grapes are ripe but not heavy.
14 month ageing. 80% in stainless steel vats and 20% in French oak barrels.
Minimum *filtration to preserve maximum natural character.
Enjoy it with crayfi*sh, lobster, *sh with sauce, Thai food or soft cheese.
